Elvin Jin, is a passionate culinary expert with more than 15 years of industry experience. Elvin brings his commitment to excellence to the sushi world by using the philosophy of combing natures finest ingredients and his best culinary abilities to yield amazing results. Elvin works from core principles: using only the highest quality, freshest fish, incorporating the best local produce, prepare it and try to make people happy, and you will succeed. At 14 years old, Elvin moved to the East Bay and began shadowing his parents at their own sushi restaurant, ultimately sparking his creative approach to sushi. Elvin was exposed to many ethnic cuisines from around the globe. The unique taste of different ethic food inspired Elvin to incorporate those ingredients and spices into his own Japanese dishes. Elvin works his magic through creativity and endless possibilities. After college Elvin found his true passion remained in cooking and he continued to pursue his true passion. In his later years he had an opportunity come up to go back to Japan to cook. Though those years were very tough, he remembered one thing, when moments become tough, always remember why you started. It is the journey, not the destination. By day he learned to cook everything from tempura to yakitori. By night, he would frequently visit his favorite sushi-ya, studying the work of the sushi masters he'd known since he was a boy, coaxing them to reveal recipes and tips, then adapting their secrets to reflect his personal style, which still representing authentic Japanese tradition
